This coffee comes from Juan Rodriguez from the Xayomblaj community which located in the famous Huehuetenango region. 'Wiwitz' refers to the smallholder producers in a specific area which in the local Popti language means ‘Arriba Del Cerro’ or in English ‘Up the Hill’. We visited this beautiful area with our import partner Primavera in March of 2024 and we cupped a range of coffees in their lab, including this clean washed coffee from Juan Rodriguez .
This name is very suitable for these small plots since they're high up and remote. This location has held this name for a long time. The first Jacaltecos who used this land for cultivation already gave it this name. It is one of the highest hills in the area, dividing San Antonio Huista and Jacaltenango with its immense wooded area, Aldea Chejball, Jacaltenango.
The Wiwitz hill is a paradise, for its rich soils are full of organic matter and are home to many microorganisms, which make sure that the coffee farms are always vigorous and flourishing. Besides the healthy soil they are also the best environment to work, since the workers are surrounded by various species of singing birds and wild animals.

This coffee is depulped the same day it is picked, and then it is fermented for about 24-32 hours. Juan also does a second soaking in clean water for 12 hours before setting the coffee to dry on the patio. The coffee dries on the patio for 3 days. Juan himself is in charge of the processing.
