Marco Echeverri is a third generation of coffee producer and has been working under the guidance of processing and fermentation expert Hernando Tapasco of the Cereza Coffee Company. Las Nubes (named because it gets cloud cover every day) has the perfect conditions for growing varieties with Ethiopian lineage such as Wush-Wush, Geisha and Pink Bourbon.
Hernando was one of the instructors on the Raw Material ‘Plant to Port’ course in May this year that Dave attended. During one of the cuppings focused on processing methodologies he mentioned his work with Marco at Las Nubes and we tasted this 'tri-varietal' anaerobic natural. Hernando and his partner Olga Lucia are big-hitters in all things quality and processing related in Colombia and knowing they were behind this project made it particularly appealing.
You might have the same question we did. Why blend/mix these three top-tier varieties ? Ordinarily we'd consider these special in their own right. Dave asked Olga Lucia what the intention was in doing this, and her answer was simple. It was a small production of each and on the cupping table they were all very good, but she tried blending the three and in her opinion the cup quality went up. Good enough for Olga Lucia, good enough for us.
