Mango and Blood Orange Marmalade
Our final coffee from Nicaraguan speciality exporter Gold Mountain Coffee is their 'Brix Breaker' natural Pacamara. It comes from number of their producer partners who grow this special variety. Only the ripest cherries are selected for this lot to be processed natural or 'dried in the skin'.
Brix is a measure of sugar content in the coffee cherry pulp which can be assessed by squeezing the cherry onto a Brix refractometer in the field.
Gold Mountain are a social enterprise company that work closely with small producers in Jinotega and assist them with all aspects of production and market the coffees on their behalf into the US and Europe. These small-holder farmers would never had previously had the opportunity to sell their coffees into the specialty market place.
Gold Mountain literally stand on every partner farm during picking to ensure ripeness with refractometers and ripeness bracelets. They also carry out sustainable development projects in communities, such as free computing classes for girls from coffee communities, medical assistance, microcredit, running water in schools, and educational supplies.
This natural Pacamara comes from selected partner producers across the growing regions of Jinotega and Matagalpa.
