Good things come to those who wait. We first met Oscar Hernandez from Finca Los Nogales back in 2022 and have wanted to have his coffee on the Crankhouse list since then. This year we succeeded through the help of Will Corby at PACT Coffee, and have three special coffees from this amazing family to share with you.
The farm, located in Bruselas, Huila, is family-owned and operated, with a strong emphasis on sustainability and innovation in coffee production. Los Nogales has gained recognition for its unique processing methods, including anaerobic natural processes and meticulous drying techniques, resulting in complex and flavourful coffees.
First up is this 'Chocoberry', an anaerobic washed Thermal Shock Pink Bourbon from their Alchemy series. With coffees in this category, they explore innovative fermentation methods such as mosto, pre-ferments, thermal shock, and leachate circulation, all aimed at achieving unique and distinctive flavours.

In their words: "By applying longer thermal fusions of 60C; extended fermentation of up to 7 days and a greater quantity of our pre-fermented yeasts and bacteria's on top of the juice of the coffee itself used during the fermentation, we are able to take this part of our harvest and create intensely aromatic profiles. In essence, you will still feel the varietal and terroir of the coffees in this category but with the addition of the intensity and quality of flavours produced in these longer fermentation."
